Day 26: 30 Days of Egg Toast

Whoa baby. We just made a straight up egg salad EXCEPT way better. Because egg salad doesn’t deserve to be boring. We named this after the Betty Draper of Mad Men because, what’s more 60s and American housewife than an egg freaking salad? A cucumber sandwich? Ambrosia salad? Maybe.. This egg toast is not like a thick egg salad, it’s definitely more of a liquidy and loose situatio. Essentially, more of a dressing over the egg which soaks nicely into the bread making it a whole tasty experience.

Anywayz, here’s what you’ll need for toast for 3 people:

  • 3 Eggs

  • 1/4 cup of mayonaise

  • 3 TBSP white wine vinegar

  • 1 TBSP of dijon mustard

  • 1 lemon

  • 2 lil’ stalks of chives/green onions

  • 5-ish sprigs of dill

  • 2 celery sticks (chopped)

  • Salt + pep

  • Truffle oil (like 8 drops)

  • Cayenne

  • Baguette

  • Butter

First things first, hard boil them eggs for 10 minutes, then put them into an ice bath. Once cool (shouldn’t be too long), carefully peel the eggs, cut in half, and transfer the yolk to a regular sized bowl. Mix in your mayo, vinegar, mustard, lemon, chives, dill, chopped celery sticks, salt, pep, truffle oil, cayenne. Toast your baguette on the stove with butter. Then.. LAY YOUR MASTERPIECE ON THY TOAST. Garnich with any extra dill and cayenne.

What I love about this one is that it’s a total save-for-later toast, which is often hard in the egg world. So, make some extra for the people in the back!
