Day 28: 30 Days of Egg Toast

Playyyy ball! And all those other baseball terms. I mean, you’re probably like me and support your local minor league team, but have only been to a baseball game because it’s essentially a social event that used to have cheap beer, but now it’s kind of boujee and they have like, bourbon slushes and putting greens and uncomfortable groups of recent college alumni in khaki shorts and said alma maters polo. Can you tell I’ve had some wine?

Anyway, sporting events aren’t all bad. Mostly because a lot of these places have finally figured out good food! But, if you’re watching sporting event re-runs, or ones with virtual crowds this year, this hot doggo is pretty dang good in that situation. Especially for those 11am EST games. I mean, how dare they.

Ingredients:

  • Kielbasa (ours is a mild spice from Costco)

  • 1/4 White onion

  • 1 Baguette

  • 4 Eggs (add milk, buttermilk, or greek yogurt for fluff)

  • Sour Cream

  • Horseradish

  • 1 Garlic Clove - minced

  • Butter

  • Salt + pep

Cut your kielbasa in half LONG ways. You will pan fry the kielbasa open side down until nicely browned, do the same to the other side also.

Sautee your onions in some butter with salt and pepper until nice and golden brown and flavorful, you can do this in the same pan as the kielbasa, and at the same time so it picks up all those good meaty flavors in the kielbasa.

Slice long ways in half and coat your baguette with butter and the minced garlic. Oh yeah baby, garlic bread! Hopefully your baguette is pretty fresh, so you’ll toast that bub on the pan ‘till she nice and golden and the inside will stay soft.

Mix even parts sour cream and horseradish and place into a small plastic bag. Cut the corner of the plastic bag so there’s a big enough hole for you to squeeze out onto the toast.

Mix up your scrambled eggs with milk, buttermilk, or greek yogurt for extra fluff, and salt and pepper. Scramble them babies on the pan, duh.

Get out your baguette, place your kielbasa, your scramble, your onions, and drizzle that sour cream horseradish all over!

Honestly for something that’s truly not that complicated, this polish breakfast dog is fiiiiire. And it’s fun to present on a whole long baguette. To serve the peeps we cut the baguette into however many slices. Definitely recommend doing that on a flat surface!
