Day 30: 30 Days of Egg Toast

30 days. Whoa baby. We made it! Literally thank god. Love you eggs, love you toast. But I’m tired… of you. For this last toast I threw on all the veggies, salmon, some of my favorite thangs.

Ingredients for 1 Person:

  • Sourdough

  • 1 Egg

  • 1 Tomato

  • 1/4 Red Onion

  • 1 Carrot

  • 1 Small Mushroom Carton

  • Parsley Bunch

  • Sprouts

  • Butter

  • Dill

  • Lemon

  • Salt + Pep

  • Butter

Preheat your oven to 400 degrees. Add salmon to baking dish with butter, dill, salt, pepper, lemon. Once preheated, bake for 15 minutes.

Chop your red onion and peel your carrots into ribbons and place in bowl with red wine vinegar, brown sugar, and pepper.

Dice your tomato and add to bowl with salt and pepper.

Sautee your mushrooms with salt and pepper and butter on the stove top.

Toast your sourdough on the pan with some good butta.

Scramble your eggs (add buttermilk or greek yogurt for extra fluffy eggs).

PLATE YOUR TOAST! Squeeze all the lemons on it at the end. Add lots of salt and pep. And herbs.
