White Balsamic Berries & Brie Crostinis

Oh yes, we are back baby! Welcome to day 1 of 10 days of BAGUETTES! It’s been a minute since our 30 days of egg toast and 7 days of grain bowls (that I sort of swept under the rug, but the bowls are on here and they are delish), so needless to say I am overdue for another Hungry Holls “challenge”. And this time, we have MERCH COMING… WOOOO! And I’m pretty confident that there’s something for everyone in this little Frenchy collection for everyone. Tim and I have been wearing them for the past few weeks basically everywhere. Itssa good lewk for sure.

10 Days of Baguettes: Day 1

Alright! Baguette #1! I wanted to start out with something really bright and beautiful, easy to make and a cute little entertainer crostini. Was honestly kind of shocked (not that I should have been) how delish it turned out to be. Creamy, tangy, fruity, minty, crunchy. Yum.

White Balsamic Berries + Brie Crostinis

Ingredients:

  • Baguette

  • Olive Oil

  • Brie Cheese

  • White Balsamic Vinegar

  • Raspberries, Blackberries, Strawberries

  • Brown Sugar

  • Fresh Mint Leaves

Directions:

  • Pre-heat your oven to 250 degrees. Cut your baguette into little crostinis. Place on baking sheet, drizzle with olive oil. Bake for 10 minutes.

  • Slice your strawberries in quarters, place in small bowl with blackberries and raspberries, pour over white balsamic vinegar, enough so there’s a small pool at the bottom. Toss 2 or 3 times so every berry gets a chance to hang at the bottom.

  • Take your wheel of brie and microwave for 30 seconds.

  • Take out your crostinis, spread your softened brie, scoop on your white balsam berries, sprinkle some brown sugar, and add your mint leaves.
